Brownie Cookies

This is for sure going to be the best brownie cookies you will ever try. These cookies have a crinkle top like brownies and they taste heavenly.
What are Brownie Cookies?
Brownie cookies are also known as brookies are a mixture of brownies and cookies. They taste like brownies and even have a crinkle top like them but they are shaped as cookies. They are super simple and easy to make and do not require alot of ingredients.
Ingredients:
- Butter 2 tbsp -35 g
- Semi sweet Chocolate 3/4 cup -105g
- Egg 1- 50 g
- Light brown sugar 1/3 cup – 50g
- All purpose Flour 1/2 cup- 60g
- Coco powder 1 tbsp – 5g
- Baking soda 1 pinch 1 g
- Salt 1 pinch 1 g
Method:
Step 1:
Add 2 tbsp of butter and 3/4 cup of chocolate or chocolate chips in a bowl and melt. You can either melt it on a double boiler or you can simply put in the microwave with some intervals. I did on a double boiler and it does not take a lot of time because we added butter and it will help it melt quickly.

Once melted set it aside to come to room temperature.
Step 2:
Beat 1 egg and 1/3 cup of brown sugar together until fluffy, double in size and light in colour. This is an important step because if you beat it till fluffy It will add the crinkle effect on your cookies.

Add the melted chocolate in the egg and mix it nicely.
Step 3:
Now add all the dry ingredients that includes 1/2 cup all purpose flour(make sure to sieve the flour first), coco powder 1 tbsp, a pinch of baking soda and a pinch of salt to balance the flavour.

Mix them all together but do not over mix and you do not need to use the beater after beating the egg and brown sugar .
Now you need to rest it for 10 minutes by covering it with a plate until it becomes thick. You can also put in the fridge if its hot. After 10 minutes the mixture will become thick and you can easily scoop it into balls to bake cookies.
Step 4:
Scoop it to make cookies. Make sure to line the baking tray with parchment paper and bake them at 180*C for only 10-12 minutes. Do not over bake other wise they will become very hard once cooled. It will look that they are soft and under baked maybe but when you will let them cool down they will be soft and fudge like brownies.

Let them cool completely so they dont break. Enjoy the most delicious cookies ever!
