These chicken enchiladas or chicken cheese rolls are made with tortillas wraps and filled with shredded chicken and sauce and topped with some cheese.

This is an easy chicken cheese enchiladas recipe, the best you will ever eat. Must try once!

Ingredients For Chicken Enchiladas:

To prepare Chicken:

  • Chicken Breasts(boneless) 2
  • Onion 1/2 medium size (chopped)
  • Garlic 2-3 cloves
  • Salt 1/2 teaspoon
  • Black Pepper 1 teaspoon
  • Water 1/2 cup

Sauce:

  • Oil 2 tbsp
  • Tomatoes 2 medium size (chopped)
  • Garlic 2-3 cloves
  • Onion 1/2 meduim size
  • Tomato Paste 3 tbsp
  • Black pepper 1 teaspoon
  • Crushed Red Chilli 1 teaspoon
  • Red Chilli powder 1/2 teaspoon
  • Salt to taste
  • Oregano1 Teaspoon
  • Water 1/2 cup

Toppings:

  • Onion
  • Capsicum
  • Mozzarella Cheese
  • Oregano for garnishing

Method to Prepare Chicken Enchiladas:

Prepare Chicken:

To prepare chicken in a pan add all the ingredients mentioned above along with chicken and 1/2 cup water and cook till the chicken is tender and the water has fully evaporated.

Shred the chicken:

Once the chicken is cooled down shred the chicken evenly.

Prepare Sauce:

Add 2 tbsp of oil in a pan, 2 chopped tomatoes and 1/2 medium size onion along with some chopped garlic, tomato paste and other spices mentioned above. Cook it on low to medium flame until the tomatoes are soft and a sauce or paste is formed.

Let it cool before adding it in the chicken.

Now grind the sauce or paste and grind it.

Mix sauce and chicken:

Once the sauce is grinned add half in the shredded chicken and mix and set the half aside.

Prepare Chicken Enchiladas:

To prepare chicken enchiladas take a tortilla wrap fill it with chicken, some chopped onion or other vegetables you like, good amount of mozzarella cheese and fold it.

Put in folded tortilla wrap in the tray. ( Add a little bit of sauce on the bottom of the tray so the tortillas do not stick). Now repeat the process until the tray is all filled.

Spread the sauce that you was left behind on top of the tortillas wraps. Spread a generous amount of cheese on top and bake it at 170*C for 10-15 minutes or until the cheese on the top has melted.

Your delicious chicken enchiladas are ready!
