Fried Rice

Fried rice is a dish of already cooked rice i.e boiled rice which are stir fried with vegetables and chicken and eggs. They are made with a lot of different recipes, some like chicken fried rice and some only like vegetable fried rice.
When ever I have extra leftover boiled rice in the fridge I will utilize them by making these Fried Rice. What a great way of using the rice and they turn out extremely delicious. You can also make them with freshly boiled rice but I prefer with the left over ones. They are super simple and very easy to make. You can use whatever vegetables you like and skip the ones you don’t want to use.
Ingredients:
- Egg 1 (optional)
- Oil 2 tbsp
- Garlic 3 cloves
- Carrot 1/2 cup
- Capsicum 1/2 cup
- Cabbage 1/3 cup
- Peas or any other vegetable 1/2 cup
- Corn 1/2 cup
- Soya sauce – 1 tbsp
- Chicken powder/cube 1/2 tbsp
- Crushed red chilli 1 tbsp
- Black pepper 1 tbsp
- Chilli sauce 1 tbsp
- Oyster sauce( optional) 1tbsp
- Boiled Rice 1 cup
Method:
Add fresh Garlic :
Add 2 tbsp of oil in a pan. Once a little warm add garlic cloves chopped. I took 3 garlic cloves finely chopped them and cooked them until they were nice golden brown.
Add Vegetables:
Now add vegetables. I added carrot, capsicum, and cabbage(julienne cut) and some frozen vegetables like corn and peas. You can add whatever vegetables you like and skip the others.

Note: Cook the vegetables on medium to high flame other wise they will become watery. We also want them to be a little crunchy. If they are soggy the rice will not turn good.
Add Sauces:
Now add Soya sauce, Chili sauce and Oyster sauce in the vegetables. You can skip the oyster sauce as it is not available all the time at home.

Chicken cube: Add half chicken cube in the mixture. You can also use chicken powder.
Spices:
For the spices simply add black pepper powder and crushed chilli. Add salt but first taste the mixture because we have already added soya sauce with is very salty and chicken cube which is extremely salty.

Boiled Rice:
Now add boiled rice. You can freshly boil rice or the best would be to use the leftover boiled rice from a day before. Also if you add salt while boiling rice then you will have to be more careful while adding salt in the mixture. You can totally skip the salt to avoid over salty rice.

Add the boiled rice in the mixture add mix everything nicely. Turn the heat very low while mixing.
Make scrambled egg:
Now in a separate pan make scrambled egg and garnish the rice with the egg.
