Kalakand Recipe

Kalakand is a sweet that is made from cottage cheese and cooked in milk and sugar till it leaves the pan. It is a the form of mithai that is softer that barfi and is firmer than milk cake. This recipe for kalakand is a very simple and easy to make with just a few ingredients available at your home.
Step 1 : Make Cottage Cheese
Ingredients
- 6 cups Milk (use full milk)
- 3-4 tbsp Vinegar (you can use lemon as well)
Method for Cottage Cheese
1) Boil 6 cups of milk in pan.
2) Once Boiled add one tbsp of vinegar at a time and mix gently. The milk will curd and will start getting separated.


3) I added at least 3 tbsp of vinegar and then the cottage cheese and green water was separated.
4) Now take a strainer and place a cheesecloth on top. Strain the cottage cheese and then rinse it with cold water.

5) Now tie the cheesecloth tightly and let the water release by hanging it to the tap. Do this for 10-15 minutes only.
6) Mash the cottage cheese with your hands.
Prepare Kalakand
Ingredients
- 2 cups Milk
- 1/2 cup Condensed milk (you can use regular sugar)
- Cottage Cheese (that we prepared)
- Almonds and pistachios (for garnishing)
Method to Prepare Kalakand
1) Boil 2 cups of milk on medium flame till it is reduced to half quantity. Keep stirring in between.
2) Then add sugar and mix properly until the sugar is dissolved.
3) Now add the cottage cheese that we prepared and cook on medium to high flame until the milk is dissolved.
4) The mixture will start leaving the pan and become thick like methai.
5) Grease the pan or mold before adding the kalakand so that when you demold it easily comes out.

6) Garnish is with nuts(almonds) and let it set for 3-4 hours in the fridge.
