Mini Pizzas Recipe

Mini Pizzas are one of the most selling items in Pakistani Bakeries. This recipe is a classic Pakistani bakery style Pizza. They are simple to make, they do take a little effort as you make them from scratch but I guarantee you it tastes amazing.

They are best for school lunch box, as they are small and are easy for the kids to eat. Best for tea parties and snacks. You can try this recipe and get a lot of compliments for sure.
Ingredients:
Dough:
- Water (luke warm) 1/3 cup
- Milk (luke warm) 1/3 cup
- Sugar 1 teaspoon
- Instant yeast 1 teaspoon
- All purpose flour 1 cup
- Salt 1 teaspoon
- Oil 2 tbsp
Topping:
- Oil 4 tsp
- Onion 1 medium size
- Chicken stock 1/3 cup
- Milk 1/3 cup
- Chicken (boiled) 1 cup
- Salt as req
- Red chilli flakes 1 teaspoon
- Black pepper 1 teaspoon
- Garam masala 1 teaspoon
- All purpose flour 2-3 tbsp
Pizza toppings:
- Capsicum 1
- Ketchup or pizza paste
- Mozzarella cheese
- Crushed red chilli (optional)
- Garlic powder (optional)
- Egg (optional)
First Step: Prepare the Dough
The first step is to prepare the dough. Add 1/3 cup of luke warm water and milk both, along with a teaspoon of sugar and instant yeast.Mix it and let it rest for 10-15 minutes. The yeast mixture will rise.
Note: Resting is important because if the yeast will rise it will make sure the dough will rise too but if the yeast does not rise means the yeast is old or maybe expired. If it happens do not go further as the dough will not rise and pizzas will not be as soft.
Once the yeast rise, add 1 teaspoon of salt and 2 tbsp of Oil and Mix. Now add 1 cup of All purpose flour or maybe a little more and make a very soft dough.

Important: Knead the dough for good 5-7 Minutes and do not add extra all purpose flour to avoid hard dough.

NOW COVER THE DOUGH WITH A CLING WRAP AND THEN WITH A TOWEL OR THICK CLOTH AND KEEP IT IN A WARM PLACE FOR 1-1+1/2 hours UNTIL IT RISE.
Second Step: Prepare the Chicken
Make filling by adding oil in a pan 4 TBSP, add 1 medium size chopped onion in it and cook it until they are transparent. Now add 1/3 chicken stock and milk both. Then add 1 cup boiled shredded chicken.

Add spices like salt1 teaspoon or as required, crushed red chilli 1 teaspoon, black pepper 1 teaspoon and garam masala 1 teaspoon. Let the mixture boil for good 3-4 minutes. Then add all purpose flour 2-3 tbsp until it is thick and leaves the pan.
Let it cool before applying it on the pizzas.
Third Step : Shape The Mini Pizzas
To shape these mini pizzas there are two ways. One way is to make small balls of equal size and roll each one of them separately.

Second way is that you can roll the dough all at once and then cut the mini pizzas with the cookie cutter or any circular object of your desired size.


Fourth Step: Arrange the Mini Pizzas
This is a step fun as now you will top the pizzas with the pizza sauce, pizza filling, your favourite vegetables and ALOT OF CHEESE.

On each pizza I first spread the pizza sauce, then the filling we prepared and then with some bell peppers and olives. To make the pizza sauce more fun I also added ketchup along with it as it will give it a very nice flavour and a lot of bakeries in PAKISTAN do use ketchup instead of the sauce.
Then I added mozzarella cheese(already shredded) and sprinkled some garlic powder and crushed red chilli.

Fifth Step: Coat with egg and Bake
Last step is to coat it with egg (it is optional) and bake it at 170*C for 20-25 minutes or until they are lightly brown from the bottom. Do not overcook or they will become hard.
