Pink tea(Noon Chai) Authentic Recipe

Pink tea is a traditional Kashmiri tea which is made by brewing tea leaves and baking soda together. It is then mixed with milk and it turns pink in colour. Is has a lot of names including Pink tea , Gulabi Chai , Pink chai or also known as Kashmiri Chai.

As soon as winter arrives a lot of households make the Qehwa of pink tea and then drink the whole season. This recipe is the original authentic recipe for

Step 1 : Make Qehwa

To make Qehwa or Pink tea mixture and 6 glass of water in a pan. Add a cinnamon stick, Star anise 2, Black cardamom 2, Cloves 6-7, Green Cardamom 8-10, Salt 1/2 teaspoon, Baking soda 1/4 teaspoon.

Add Pink tea leaves :

Use good quality Pink tea leaves so that you can have a good pink color when you add in milk and also tastes amazing. Add 4 tbsp of pink tea leaves.

Step 2 : Boil

You need to boil this Qehwa mixture until the water is reduced to half. Keep stirring in between.

Note: Stirring in upward motion is very important as it is going to make it release the pink colour of this qehwa.

Step 3: Add cold water

Once the Qehwa is half the quantity add in ice cold water 1 glass and cook again for 10 more minutes stirring continuously.

Step 4:Stain

After 10 minutes stain the Qehwa (mixture) through a strainer. Throw away the ingredients and store the drink in a glass container.

Step 5: Keep in the fridge

You can keep the Qehwa in the glass container. Always use a glass container as plastic is not good for health. You can store it in the fridge up to at least one month.

Step 6: Make tea

Now add milk in pan along with your desired amount of sugar and add Qehwa . The amount of Pink tea qehwa depends upon the amount of tea you are making. You need to keep adding until you get the desired pink colour.

Add Nuts:

Add crushed almond and pistachios in the tea.

Interesting Information: It is also called Noon chai as noon is a word for salt and this tea has a hint of salt in it so in some areas of the world it is known as Noon tea.

  • 6 glass Water
  • 1 Cinnamon stick
  • 2 Star Anise
  • 2 Black cardamom
  • 7 Cloves
  • 10 Green cardamom
  • 4 tbsp Pink tea leaves
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking soda
  • 1 glass Ice cold water
