Ras Malai Made with Cottage Cheese

Ras Malai is a dessert that is made with paneer or cottage cheese and is boiled in a sugar syrup and soaked in milk. It is extremely delicious and is made in a variety of ways. I will share a very easy and fail proof recipe with you with all the tricks.
It is actually made in 4 steps. First step is to make cottage cheese with milk. Second is to make balls of cottage cheese, third is to cook it in sugar syrup and the last step is to soak it in milk that is cooked separately and made thick.

Ingredients:
For Cottage cheese(paneer):
- Milk 5 cups
- Vinegar 3 tbsp or as req
For Milk Rabri :
- Milk 4 cups
- Condensed Milk/Sugar 1/3 cup
- Almonds 1/3 cup
For Sugar Syrup:
- Water 4 cups
- Sugar 1+1/2 cup
First Step: Make Cottage Cheese
To make cottage cheese you need 5 cups of milk and let it come to boil. Once the milk is boiled add vinegar 1 tbsp at a time until the milk is curdled. The milk will become thick and grainy and will start separating leaving a green colour water behind.

Take a strainer, keep a muslin cloth on top and strain the cottage cheese. Turn on the tap and run it through cold water so that the sourness of the cottage cheese is finished. Now gently press this cottage cheese to release water, tie it with a thread and leave it for ten to fifteen minutes with the tap so that all the extra water is drained.
Second Step: Make Cottage Cheese Balls
Now once all the water is drained from the cottage is you will take it out of the muslin cloth and knead it with the help of your palm for about good 7-8 minutes until it turns into a smooth dough and is crack free.
Now cut it in equal parts and make smooth balls of it. Do not make too big balls as it will cook in sugar syrup and grow bugger.
Third Step: Make sugar syrup and cook
For sugar syrup you need four cups of water and 1 + 1/2 cups of sugar. Cook until the sugar is dissolved completely.

Now add the cottage cheese balls in the sugar syrup , TURN THE FLAME HIGH AND COVER IT. Do not open it for about 15-17 minutes. After 17 minutes turn off the flame and let the ras malai cool down in the syrup.
Fourth Step: Make Milk Rabri
To make milk rabri you need 4 cups of milk. Add I/3 cups of condensed milk, some almonds and cook it until the milk is reduced to half. You can keep the flame medium but you will need to keep stirring in between to avoid burning the milk. Once the milk is thickened turn off the flame and let it come to room temperature.
Important: You can cook the milk along with when you are preparing the cottage cheese so that once the ras malai is cooled down you can directly add the ras malai in it.

Now press each ras malai to remove excess sugar syrup and add it in the milk rabri. Put it in the fridge until it is chilled.
