This is a complete guide on how to make samosa chaat at home. This samosa chaat recipe is very easy to make but a little bit time taking because we will make samosas and Chana mixture from scratch at home.

Prepare Samosas For Samosa Chaat

SMAOSA RECIPE

Step 1: Samosa Dough

Ingredients
  

  • 2 cups All purpose flour
  • 1 teaspoon Salt
  • 1 tbsp Cumin seeds(zeera)
  • 2 tbsp Oil/ghee (Use ghee if you have one)
  • 1/2 cup Water or as required

Method for Samosa Dough :

1) Add All purpose flour, salt, cumin seeds, oil or ghee in a bowl. Mix everything together with hands.

2) Now keep adding water until the dough is formed.

3) Dough should be hard not soft so that the samosa comes out crispy when we fry them.

4) Rest the dough for 10 Minutes.

Step 2: Samosa Filling

Ingredients
  

  • 2 Potatoes (medium size, boil and mash them)
  • 1/2 tbsp Salt
  • 1 teaspoon Cumin seeds (zeera)
  • 1/2 tbsp Red chilli powder
  • 1/2 tbsp Coriander Powder
  • 1/4 tbsp Crushed Red Chilli
  • 1 Green chilli
  • 1 tbsp Coriander Seeds

Method for Samosa Filling:

1) Boil 2 medium size potatoes, peel and then mash them. Let them cool.

2) Then add Salt 1/2 tbsp, Cumin Seeds/zeera 1 tbsp, Red Chilli Powder 1/2 tbsp, Coriander Powder 1/2 tbsp, Crushed Red Chilli 1/4 tbsp, Green Chilli 1 and Coriander Seeds 1 tbsp.

3) Crush coriander seeds in hands and then add it in the mixture. Now mix everything together. You can adjust the salt and red chilli powder according to taste.

Step 3: Shape Samosa

1) Now that dough has rest for 10 minutes cut them into equal parts and make each part into balls( we call them pera).

2) Take 1 ball and roll it into flat roti or tortilla shape. 1 tortilla will make 2 samosas, you have to cut the tortilla from between into 2 parts.

3) Now take 1 piece of roti and put them together from the part where you cut them. Glue them by using water. It wil now make a hole for the filling.

4) Fill the hole with the potato filling we prepared and the bottom part stick it with fork by gently pressing it.

How to shape big samosa

Step 4: Prepare Channa Mixture:

Ingredients
  

  • 4 tbsp Oil
  • 1 teaspoon Cumin seeds (zeera)
  • 1/2 teaspoon Methi dana/fenugreek seeds
  • 1/2 teaspoon Crushed Red Chili
  • 1/2 teaspoon Rai/ mustard seeds
  • 1/2 tbsp Cumin Powder
  • 1/4 tbsp Kalonji/ Nigella seeds
  • 1/2 tbsp Salt
  • 1/2 tbsp Red chilli powder
  • 1 cup Chick Peas (boiled)
  • 1/3 cup Water or as reruired
  • Chickpeas1/3cup+Water 4tbsp (grind them together)

Method to make channa:

1) In a pan add Oil 4 tbsp, Cumin Seeds/zeera 1teaspoon, Methi dana/fenugreek seeds 1/2 teaspoon, Crushed Red Chili 1/2 teaspoon, Kalonji/ Nigella seeds 1/4 tbsp, Rai/ mustard seeds 1/2 teaspoon, Salt 1/2 tbsp, Cumin Powder 1/2 tbsp and Red Chili powder 1/2 tbsp.

2) Cook them for 2 minutes on low to meduim flame.

3) Now add 1 cup boiled chick peas(channa) along with 1/3 cup water. You can add the same water that was left when you boiled the channa in.

4) In grinder, grind 1/3 cup channa with a little bit of water almost 4 tbsp.

5) Add this grinded mixture in the channa and cook these channa on meduim to loe heat until they are soft and the mixture is thick.

Step 5: Fry Samosa

Add oil in a pan and let it heat. Now its time to fry these samosas on medium flame. Take them out when they are golden brown from both sides.

Step 6: Assemble the samosa chaat

Ingredients
  

  • Samosa
  • Channa mixture
  • Plain yogurt
  • Onions sliced
  • Immli ke chatni (tamarind chatni)
  • Green chatni (podenay ke chatni)

Method:

1) Break the samosa one or two into a plate.

2) Add the channa salan on top.

3) Now garnish it with sliced onions, immli ke chatni, green podina chatni or plain yogurt.
